I know of only kal dosa(dosa made on a concrete stone)with Payya(gravy made with minced meat).Hey! do not miss it if u were go to south.Especially at Ponnuswamy hotel, Egmore, Chennai.

You are right ' Ceylon parathas ' are a delight , basically the origin is from Chettinad down South in TN. Where they specialise in these 'egg' stuffed parathas and are quite ' spicy '.. smoke thru your ears !!!!
The Chettinad flavours are very overwhelming !
For your info, Sarvanan Bhavan has overseas branches too !!
